So, I've recently been introduced to the Cabin Fever movies (1,2 & 3) as well as a few other random goodies.
What can you all recommend? What should I be watching?
I have to warn you, if it has zombies in it I've probably already seen it.
A few goodies that you might have not seen from my part of the world:
Primal (http://www.imdb.com/title/tt1438534/) (I highly recommend this)
Brain Dead aka Deadalive (http://www.imdb.com/title/tt0103873/) (the goriest film ever and directed by Peter Jackson!)
Rogue (http://www.imdb.com/title/tt0479528/) (not bad in for the genre [giant creature])
So hit me up, the cheesier the better. I'm not a fan of torture porn movies (like hostel) but general gore is fine.

Hostel was not torture porn. It was a shameless attempt at freaking people out with gore, that failed miserably because it forgot one of the primary rules - less is more.
The scene in Reservoir Dogs where Mr. Blonde slices the cop's ear off with a straight razor is much more dark than any scene in Hostel just because they turned the camera away. In it's favour was the fact it showed nothing but clumsiness in its depictions of torture, accurately portraying the idea of rich boys playing at sadist.
Human Centipede, and the Saw series were the same - mindless shit meant to freak normal people out. Fails miserably.
And if you want cheesy horror, Feast 1, 2 and 3. Midget catapults, naked biker chicks, and Jason Mewes playing Jason Mewes.
If you want zombie movies you probably haven't seen;
Zombie Transfusion - one of the highlights of this little gem is seeing a zombie tear a foetus from a woman and eat it in front of her.
Colin - made with a budget of £42, this movie follows Colin from initial zompocalypse outbreak, to infection, then follows his life as a zombie. Highlights include neds mugging zombies for their shoes.

Event Horizon (I know, I know - not scary. But the almost subliminal flashes are quite brutal, and Sam Neill nails it as the creepy fuck)
American Psycho (good portrayal of insanity, some decent torture scenes, though for the dark stuff, go read the book)
Wolf Creek (though I imagine you've seen that to death)

The Devil's Backbone
The Evil Dead: Original 1981 (not scary, as such, but the rapist trees, and especially the pencil through the tendon was nice)
The Descent
Cannibal Holocaust (obviously)
Guinea Pig 2: A Flower of Flesh And Blood
The Fly (had some decent messy moments)
Near Dark (not creepy, but still have to add it on the list)
The Wicker Man: Original 1974 (subtle, but creepy)

The Loved Ones (again, I imagine you've seen this)

The Children (http://en.wikipedia.org/wiki/The_Children_%282008_film%29) is a 2008 British (I've seen it three times and never noticed the accents) horror movie that will freak you out if you're childless, and scar you for life if you have kids. It really makes you question if you'd have the heart to smash a little boy's face in with a hammer if he was coming at you with a pair of hedgeclippers.
Highway to Hell (http://en.wikipedia.org/wiki/Highway_to_Hell_(film)), because who doesn't love a little Ben/Jerry Stiller cameo. Part comedy, part horror, and entirely too 90s.
Hell (http://www.imdb.com/title/tt1643222/?ref_=fn_al_tt_3), a German horror flick where the sun gets too damn hot, features your standard backwoods community of cannibals. It's a bit plodding, but man, aren't germans just really good looking?
Frontier(s) (http://www.imdb.com/title/tt0814685/). So, speaking of backwoods cannibals, ever think they were just too damn lovable? Well, not in this French flick! Now they're also Nazis, who want to breed with Arab girls fleeing a fascist election in Paris to add new blood to their master race. Yup!
The Curse (Noroi) (http://en.wikipedia.org/wiki/The_Curse_(2005_film)). Maybe the scariest "found footage" horror movie I've ever seen. It deals with the bizarrely Japanese concept of a curse, demonic possession, and some of the weirdest scenes I've ever witnessed.
Dread (http://en.wikipedia.org/wiki/Dread_(film)), because psychological explorations of human fear mesh so well with gore.
Ravenous (http://en.wikipedia.org/wiki/Ravenous) is one of my favorites. An oldie with a soundtrack worked on by Damon Albarn, starring greats like Robert Carlyle, Guy Pearce, and Jeffery Jones, it deals with a survivor of the Mexican-American war stationed in the Northwest, battling human nature and the myth of the Wendigo. (Speaking of Jeffery Jones (http://en.wikipedia.org/wiki/Jeffrey_Jones), if you consider his 2003 arrest, Ferris Bueller's Day Off could be considered much darker.)
If you want campy Zombie horror - don't worry, I got you.

ZMD: Zombies of Mass Destruction (http://en.wikipedia.org/wiki/ZMD:_Zombies_of_Mass_Destruction_(film)) (You like subtle? Too bad!)
Juan of the Dead (http://en.wikipedia.org/wiki/Juan_of_the_Dead) (Just as heavy-handed, but foreign so it's better)
Død snø (http://en.wikipedia.org/wiki/Dead_Snow) (The gold fucking standard)
Død Snø 2 (http://en.wikipedia.org/wiki/Dead_Snow:_Red_vs._Dead) (Just saw it. Not nearly as good as the original because it's trying way too hard, but still worth a watch)
If you want something more action packed in your Zed-flicks...
La Horde (http://en.wikipedia.org/wiki/La_Horde) (If you can't tell, it's French)
Rammbock (http://www.imdb.com/title/tt1583356/) (This is more a character drama, but I highly recommend it)
The Wild Hunt isn't the best movie, but it's a festive watch if you want to see nerds gone wild (and murderous). It's not straight up horror, but it's about as far as I venture into that genre. Also: Teeth!

Saw 1-3 were awesome, it was not until they made 4-6 that they failed. 7 redeemed itself, in my opinion by bringing back Cary Elwes.
I'm with Aure, Rubber is pretty good.
Thankskilling is hilariously good, Thankskilling 3 not so much. (There is no Thankskilling 2 though, which is the only reason I watched 3)
Stalled is a fantastic zombie flick revolving around a janitor stuck in a bathroom stall during the zombie Apocalypse. It is as awesome as it sounds.
The Orphanage was great.
Wrestlers Vs Zombies features wrestlers turning into Zombies. It is as awesome as it sounds.
Finally, I suggest Bad Milo, a movie about a demon that lives in a mans butt and when said man stresses out, the demon pops out and kills those who stressed him. It is as magnificent as it sounds.
